This breakfast is simply the best. Eat it in the same way as cereal, adding your favourite yoghut, I love and am addicted to coconut yogurt, and/or some fresh berries or your favourite fruit.
Ingredients
3 tbsp coconut oil melted
3 cups coconut flakes
2 cups raw nuts of your choice roughly chopped
2 cups raw sunflower seeds and pepita seeds
2 tbsp chia seeds
1 tspn ground cinnamon
2 tbsn maple syrup or rice malt syrup
Method
Preheat oven to 120 deg and line a baking tray with baking paper
Combine all ingredients and spread evenly on the tray
Bake for 20-35 minutes until golden, turning halfway through cooking time. Be very careful to not leave it as it cooks quickly and can be easily scorched.
Remove and allow to cool
I usually double this to last the week in my house hold of five. Even though everyone doesn’t always eat it at breakfast, someone may eat it at night for an after dinner snack.
