Raw Cranberry Nut Slice

Indulging ourselves on treats chocolate and lollies and feeling incredibly guilty after doing this sends the wrong messages to our bodies and mind. If you are going to eat these foods at least enjoy it allowing your body to metabolize it without the guilt and bad feelings.

However, there is an alternative to eating highly processed sugary foods that still taste just as good, and I think they taste even better because they are healthy and free from the foods that cause harm to our system.

My friend gave me this recipe this week. It was incredibly quick and easy to make and tastes delicious. Not only does it taste great it is also good for you! All of my recipes include whole foods free from any artificial ingredients or flavours making this slice available to eat anytime of the day including pre-gym or mid afternoon boost.

We often feel like we need to treat ourselves with an indulgence and by making the foods in our own kitchens and knowing exactly what goes into them allows us to indulge in nutriciously healthy guilt free food.

RAW CRANBERRY NUT SLICE

Ingredients

Base Ingredients:

2 cups of dried berries (your choice, I like cranberries for a tart taste)
6 Medjool dates
2 cups of nuts (your choice, I used almonds)
4 tablespoons coconut oil
4 tablespoons cacao powder
Pinch salt
One teaspoon vanilla extract

Topping Ingredients:

1/2 cup coconut butter (solidified coconut oil)
Two teaspoons vanilla extract
Two tablespoon of cacao powder
8 drops of orange oil (I used Young Living Oil)

Method

Blend all base ingredients together in a food processor or thermomix and press into a shallow lined tray and place in freezer to set.
While the base is setting mix together topping ingredients in food processor or thermomix.
Remove base from freezer and pour topping over and spread evenly.
Place back into the freezer to finish setting for about 1 hour.
Cut into bite size squares and store in the fridge.

This will keep in the fridge for two weeks unless it gets eaten first (more than likely).
